As industrial uses of enzymes have expanded, so have the uses of enzymes in the home. In industry, the production of cheese rennet is widely used; it is also used to make various traditional forms of curds and whey (junket; roerost). In the home, meat tenderizing protease is used in the form of barbeque sauces and salts. In Europ, since the early part of this century, laundry aids containing enzymes have been commonly used. With the development of heat and alkali stable bacterial enzymes, this practice has spread; thus washing powders (with added enzymes) for hand and machine washing are now widely used.
